There is no shortage of ways to become alarmed. If there's nothing going on in your own life that's of concern, you can still find something. Really you just have to close your eyes and point. How we've handed control of the food supply, with our blessings and tax dollars, to one entity, and their mind is not on our health and happiness.

And yet. It's hard to act from down here. By "act," I mean make dinner, as well as change the course of history. The two are inextricably linked, of course. Your food dollar is your political muscle, and your physical one, too.

As for the edibles, are you in search of a gluten-free flour that does not taste like rancid beans, feel like driveway mix between your teeth, or prompt you to refinance your mortgage? This could be the one. I've tried it out in eclairs, ice-cream sandwiches and a galette, and there has been very little complaining heard. Back to you shortly with the eclairs. In the meantime, here's the flour.
gluten-free flour mix
- 1 C superfine white rice flour
- 1 C oat flour
- 1 C coconut flour
- 1 C tapioca flour/starch
- 1/4 C cornstarch
- 3 1/2 tsp. xantham gum
Mix well and store in an air-tight container.
